Peanut Butter Cookies

509bf0fe580611e2ad5622000a1f98e5_6I discovered a delicious new recipe at the weekend for Peanut butter cookies. Trust me they. are. GOOD. Not one for those with a nut allergy but if you’re ok to eat peanuts you’ll want to indulge in these scrumptious bites.

It’s best to make your own as they are amazing when they are warm. So, here’s the recipe for my peanut butter cookies…

You’ll need: 130g butter, 200g light brown sugar, 1 egg, 3 drops of vanilla essence, 200g plain flour, ½ tsp bicarbonate of soda, and 300g peanut butter. Preheat the oven to gas mark 3

Put the butter, sugar egg and vanilla essence into a bowl and mix it all together. Then stir in the flour, bicarbonate soda and peanut butter.  It really is that simple.

I don’t like making perfect cookies, so rather than flattening them on to a baking tray neatly into 12 individual cookies, I prefer to spread the mixture across a baking tray to form one big cookie – it does need to be flat so it’ll cook through.

Bake your cookies in the oven for 12 – 15 minutes, until golden brown. Now break them up into 12 smaller cookies. The cookies will be soft when they come out so leave them for 15 minutes to cool before enjoying them. Yum.

It’s not the healthiest recipe but for someone training for a marathon, like me, it packed with protein thanks to the peanut butter. So it’s ideal as a quick snack after a long run. You definitely deserve it after training hard.
