I attempted a very easy pasta recipe this weekend, one that I can rustle up in minutes straight after a training session. The dish is: chicken and mushroom pasta – I did say it was simple – and here is my recipe.
You will need: 300g diced chicken, half an onion, two garlic cloves, one finely chopped chili, 250g sliced mushroom, salt and pepper, plain yogurt and a dash of olive oil. Oh, and 120g of wholemeal pasta.
First of all, put your pasta on so this is cooking while you cook the rest of your dish. Then add your chicken and olive oil into a pan, and allow it to cook. Add salt and pepper to season (mixed herbs and tarragon work well in this dish too) and the onion after it has been finely chopped. Stir regularly over a medium heat for five minutes.
Add in the sliced mushrooms, two cloves of crushed garlic, and the finely chopped chili (avoid this if you don’t like hot dishes) and continue cooking for a further five minutes, stirring regularly.
Finally, drain the pasta and mix it in with the chicken, and add a spoonful of yogurt to create a light pasta sauce. Delicious!
The yogurt has calcium in it which is vital for bone strength if you’re training, and wholemeal pasta is high in fibre so ideal for anyone trying to maintain a healthy lifestyle. What more could you ask for?
